Docker: restart=always vs unless-stopped for Gladys?

What’s the advantage of restart:always compared to restart:unless-stopped (which I generally use for other services on my NAS)?

In the context of Gladys, no difference in my opinion. You can check Docker’s documentation to see if there are any technical differences that might impact your usage.
