Logitech C905 Camera: 500 mA
I had left the keyboard and mouse → 400 mA
Nothing on the HDMI or the GPIO

Is your power supply indeed a 2.5A one?
If you have a plug that measures consumption, put it in front of your power supply and reconnect your peripherals one by one (one per day, for example), to see.
It could be a faulty USB cable. Also, you can try to reproduce the fault by moving them.
