Being on Gladys Plus, I invited my wife as a User. When she launches Gladys, she gets a clone of my Gladys and can modify everything as if she were me! Is that normal? And what’s the difference between User and Administrator?

I’ve just reset the link between her Gladys Plus account and the local account on your instance.
On your side, you now need to create a local user in Settings → Users.
Then, on her first login at plus.gladysassistant.com, she will simply select which local user she wants to be associated with.
Don’t hesitate to tell me if you run into any difficulty 
Here’s the difference 
An administrator has full access to the Gladys instance. A user can only manage their dashboard, chat with Gladys, see their calendar and the map. They cannot create scenes, edit preferences, or manage integrations.
In practice, Administrator is often the most convenient. The User role is more useful for someone external or for a child, for example.
