Looking for someone skilled in electronics for a wood-pellet boiler sensor

Hello.
I have a wood pellet boiler from the HS brand (https://shoplapiece.com/img/cms/Vue-eclatee-et-nomenclature-MULTI-HEAT-15-25-40.pdf) that is starting to show its age.
It is equipped with a pellet hopper with a system (https://shoplapiece.com/img/cms/MULTIHEAT-25-40-Sas-dalimentation-automatique.pdf) using low and high capacitive sensors to trigger the refilling of this hopper.
The boiler is 18 years old and since COVID when it ran underpowered it has been acting up; the fire manages to get into this hopper.
I added a thermometer connected to Gladys that controls a sprinkler system which alternately floods the firebox when the temperature of the feed tunnel becomes too high in order to stop combustion without blocking the auger due to overly wet pellets.
But when the fire went into the hopper my sensors took a hit and died.
I can replace the sensors, but they are not cheap (https://www.gavazziautomation.com/fr-fr/produit/EC5525PPAP#) — at least €130 — knowing that the next day the fire could return to this hopper and damage my sensors again.
So I was thinking I could maybe replace these sensors with a level measurement system for the hopper like here [TUTORIEL] Connaitre la capacité restante de sa cuve eau de pluie
But the sensors do not have an On/Off function; from the diagram they vary the voltage.
In short, I’m stuck — I don’t see how to replace these sensors.
