I admit I’m a bit lost; there isn’t a trigger to enable or disable a scene which would be very useful

I think you can create a global scene that calls all your other scenes, then use the Scene widget in the Dashboard to trigger the global scene
It seems to me that @pascal_sapin wants to be able to Activate / Deactivate and not Trigger / Stop the scenes.
Just use a virtual MQTT button that you can place on your dashboard. Then add a condition after the trigger of your scenes to check the state of your button. If it’s 1 then you continue the scene!
I don’t use it, but doesn’t the alarm mode do that?

personally I set up several scenes that trigger scenarios depending on whether it’s activated by badge or the alarm button on the Gladys page (handy for remote arming/disarming). It lets me start an exit delay before checking for open doors or windows. I also receive camera views for every arm/disarm, plus a voice on Google Home announcing a countdown.
Several months of operation and it feels pretty much like a commercial alarm, usable by other members of my family who simply use the badge or code keypad.
